TANDOORI CHICKEN AND AVOCADO PIZZA

Ingredients:

 

Tandoori Chicken

  • 500g Chicken thigh Fillet
  • Tandoori marinade 
  • 1 tbsp Plain Yoghurt 
  • 1/2 tsp Orange food colour 
  • 2 tbsp Lemon juice
  • 1/2 tsp Ginger, crushed
  • 1/2 tsp Garlic, crushed 
  • 1/2 tsp Coriander powder
  • 1 tbsp Chilli powder
  • Salt to taste

Pizza Toppings

  • Tomato Sauce
  • Mozarella Cheese
  • Sliced Avocado
  • Capsicum
  • Spanish onion
  • Walnuts
  • Yoghurt

Method:

  1. Preheat oven to 200°C. 
  2. In a large bowl, mix in the yoghurt, coriander powder, chilli powder, ginger and garlic, until the yoghurt is nicely coated. 
  3. Mix in the marinade, food colouring and lemon until well combined. 
  4. Evenly coat the chicken and set aside to rest for 1 hour. 
  5. Line a baking tray with baking paper and place the chicken evenly across the tray. 
  6. Cook the chicken in the oven for 7 minutes, then baste with butter. 
  7. Cook for another 8 minutes. 
  8. Prepare the pizza base on baking paper and add tomato sauce and mozarella cheese. 
  9. Once the chicken has cooked, slice and then add to the top of the base.
  10. Add the capsicum, onion and walnuts and cook for 10-12 minutes. 
  11. Once cheese is golden, garnish with sliced avocado and drizzle a small amount of yogurt on top.
